California Dreaming

19 April, 2016

There is no fruit more quintessential to California than the beautiful avocado. Originally from Mexico this fruit grows on flowering trees all across Southern California. Whenever I miss my college years in Los Angeles or my childhood summers in La Jolla, I make one of these snacks and I feel transported to an easier, more simple way of life in sunny California.

Avocados are also an excellent sources of Omega 3s. So if you have a sensitivity to fish as I do, this is a great, natural way to get that into your diet. Vitamin C, E, K, folate and B6 are a few other vitamins packed into this lovely fruit. What is your favorite avocado recipe?

  • Avocado & Banana Smoothie

Serves 2 – In a blender mix 1 avocado (pitted and skinned) with 1 banana, 1 cup of plain or vanilla yogurt and 1 cup of fresh orange juice. The result is like an Orange Julius but even better since it is healthy and fresh. Pour into two glasses, serve and enjoy!

  • Avocado Toast

A very easy breakfast choice is to toast two small slices of sourdough toast, spread veganise (a much healthier version of mayo ) on each slice, top with sliced avocado and sprinkle sea salt and pepper for delightful way to start your day. Pairs wonderfully with a latte or tea!

  • Avocado w Dressing

A classic that I grew up eating and eat often for snack or a light lunch is to slice an avocado in half and whip up a dressing. As a child I often ate this as a healthy snack and thought is was fun the way the center held the perfect amount of dressing to make it tasty. Dressing: mix the juice of 1 lemon, 3 tablespoons of veganise, 1/2 teaspoon of dijon, 1 tablespoon of capers, 1/2 finely diced shallot, and flavor with salt and pepper. I like to make mine in a little ramekin. Spoon the dressing into the avocado and voila! You can serve as a casual snack or as a side with roast chicken and a farmer’s market salad.
